The Satizol Acryl appears to be a waterborne acyrlic finish, available in both colors and clear. I'm not really familiar with it since it only appears in French language web pages.
Waterbased polycrycrylic is also a waterborne acyrlic clear finish. I can't speak to differences between these specific varieties and the Satizol.
Varnish should apply only to oil based finishes, and polyurethane varnish is a type of varnish that includes some polyuethane resin. The added polyurethane increases abrasion resistance at the expense of other desirable properties. Unfortunately, marketers are enamored with the polyurethane and use it as a label with other finishes, adding it to waterborne acyrlic finishes, which despite the polyurethane are more like other waterborne acyrlics than to oil based varnishes including polyurethane.

Yes, that is a very common usage. The stain should be well cured, but oil based varnish with go over stain, where oil based or waterborne.
Did clear varnish = semi
Did clear satin varnish = semi gloss?
Low odor & low toxicity
The varnish should apply only to oil based finishes, while Waterbased polyurethane is trendy because of its low odor & low toxicity. It goes on clear without adding a slight color that oil-based versions can, and it dries much faster than other.
Wood in its natural form cannot be used as it is. It needs lots of cosmetic changes to it before it can be supplied to the market. Wood finishing is one such change.

I agree with Mark about the wood finishing. I'd also recommend you check out some different woodworking plan resources to help you figure out your process.
