Are you planning wood shelves above a cook top? A few more details about why you expect heat and grease to be a problem would be helpful.
not above it I am thinking about over the cooler, and the entry way. the cooler is right across from the stove but the entry way is about 10 ft away... Z
In those locations heat shouldn't be a problem. Lots of finishes will handle the cleaners, though oil based varnish (alkyd or phenolic) is better than most waterborne finishes. For brush applied finish, varnish is the way to go.
For waterborne look for finishes that meet KCMA standards. (Kitchen Cabinet Manufacturer's Association) These will mostly be pro finishes, with one or two being capable of being readily brush applied. In the solvent based finishes the toughest would be conversion varnish also a pro finish. Again the KCMA standard is probably a good guide, and would lead to some other catalyzed finishes.
I'd only rule out shellac and basic NC lacquers as being more vulnerable to strong kitchen cleaning sprays. Some, especially consumer grade, waterbornes might also show some vulnerability to the cleaning products.
Thanks that is just the info I was looking for.. Z
