Got my first wooden plough plane and have it sharpened up, and getting the nack of blade adjustment. Tap, tap here and there. But My question is on the infeed and outfeed “skates”. Are they tuned, adjusted like a jointer? In the planes case the front skate be a few .ooo’s higher than the iron and the rear skate flush with the irons cutting edge?

I don't know about plough planes, but most other planes should have a perfectly flat surface, no differing infeed and outfeed.
Ductape can fix EVERYTHING!!!
The skates should be dead flat with eachother. No difference than a bench plane or molding plane.
