Traditionally, one would use a hook or a ring tool to hollow into end grain. Both work great once you know how to use them. However, they catch easily, and I would advise watching a demo or getting some hands-on instruction before trying one on your own. Once I figured out where the sweet cutting spot was, I found it to be a great tool.

This may sound a bit trite, but sharp tools and practice.
Try turning stuff out of scrap 2x stock, it's cheap.
You may wish to look at a bowl gouge if you're doing heavy stuff -- they're made out of thicker stock.
Packard sells the Crown line, English HSS, as well as one under their own name. They also offer specialty tools such as the Termite ring tool.
