We applied a few layers of Watco oil to the mdf surface. It helps prevent glue from drying on the surface and is easy to touch up as the bench gets use.
But we didn't bother edging the MDF benchtop. I was a little torn on that. I had thought the edge would get damaged a lot more than it does but it holds up surprisingly well. If you do decide to apply an edge, which would make it an even tougher worksurface, any hardwood will do from poplar to maple.
