Can I use a wipe on oil finish with all those open holes, or do they have to be filled. If they do have to be filled what would you use.

I wouldn't fill the holes - they're part of the character of the wood.
Any wipe or brush applied finish will probably run into the holes which shouldn't be a problem unless you try to fill the holes with finish. I'd finish it just like normal and then stand the boards on their edge and wipe off any finish that runs out.

Unless you really flood the surface, it won't run out of the holes. The wormy chestnut that I have really absorbs the oil finish well. I mainly use Watco on it and it gives it a warm lustre.
